It’s not Jess’s roast chicken, nor was meant to be, but Chicken in Milk is a tasty, tasty dinner. My only suggestion is to do the oven step breast side up, so that the skin there stays crispy.
Note that I said tasty, not pretty. The chicken itself is, I hope you will admit, gorgeous (if a bit raw at the point photographed above), but the curdled milk sauce from boiling milk with lemon zest does not look good at all. It winds up being delicious, but one could be convinced that I had put scrambled eggs into a sea of butter from the look of it.
